For the longest time my go to seed/nut for snacking has been almonds. Nothing against almonds(they’re delicious), but I need to mix things up every once in a while so I decided to try something new. I had heard and read some stuff about the health benefits of pumpkin seeds but had never really followed through on actually picking some up. That all changed last week when I grabbed a pack of Eden Organic Spicy Dry Roasted Pumpkin Seeds.
Let me tell you these things are awesome, think of a slightly larger, lighter, crispier sunflower seed. They come in both plain and spicy flavors, myself liking my food with some heat opted for the spicy. The balance of flavor and heat makes these pumpkin seeds a delicious healthy snack that I’ve been packing with my lunch all week.
The serving size of these little guys is 1/4 of a cup which may not seem like that much but when you’re talking about something as small as a pumpkin seed thats an awful lot of them. So instead I opt for half a serving (2 TBSP) this also makes them a quick 100 calorie snack loaded with omega fats, protein, zinc, magnesium, and a whole slew of other healthy things! I’ve been playing around with some recipe ideas with these that I’ll be sharing but I can assure they hold their own all by themselves as a quick satisfying snack!
